Consortium

The project consortium brings together partners from the gastronomy industry, informatics private sector and the academia, in an attempt to create innovation in the gastronomy tourism in the East Macedonia and Thrace region of Greece.

Project coordinator and supervisor is:

Institute for Language and Speech Processing (ILSP)/Athena Research Centre, Xanthi Branch, Greece

ILSP conducts basic and applied research on a wide range of IT technologies, particularly in the fields of linguistic and cultural technology and multimedia. In GRE-Taste, ILSP focuses on research and pilot development in information organisation and semantics, visual recognition of dishes and menus through mechanical vision and deep learning techniques as well as personalized search and visual evaluation interfaces.

Project partners are:

Technological Educational Institution of Central Macedonia (TEI-CM), Serres, Greece

TEI-CM and in particular the group from the Department of Informatics Engineering focuses its educational and research activities on innovation in IT applications. In GRE-Taste, together with ILSP, focuses on research and pilot development in visual recognition of menus and dishes through machine vision and deep learning, user interfaces and systems design, and visual assessment based on customer satisfaction surveys. Along with the participation of researchers from other Departments, TEI-CM will conduct research in the field of food chemistry and nutrition.

Optimum Informatics, Komotini, Greece

In GRE-Taste Optimum will deal with the development of the project’s information systems, from backend to final pilot applications. Optimum will implement the algorithms developed by the research teams and will integrate all the subsystems. Optimum will be responsible for optimising the systems after their evaluation.

Ktima Biblia Chora, Kavala, Greece

In GRE-Taste, Biblia Chora will contribute to the creation of the rich content of the project on wine production, the varieties of wines of the region, the history of wine and grape growing as well as its uses and the relation of wine with Greek society and tradition.

Papaparaskeva confectionary, Xanthi, Greece

In GRE-Taste Papaparaskeva confectionary will contribute to the creation of the rich content of the project on traditional pastry, its history, its connection with local society and tradition as well as uses of confectionery products.

Kerkini Farm, Serres, Greece

In GRE-Taste Kerkini Farm will contribute to the creation of the rich content of the project on the production of buffalo meat, its history, its connection with the local society and the use and nutritional value of this particular meat and its derivatives.
